No problem! I was incredibly inspired by Green Kitchen Stories who made up an incredible recipe for all of us healthy foodies. This is a stuffed pumpkin and it was incredible! It takes quite a long time to prepare, but it was totally worth it! I used a really big pumpkin for this, it almost couldn&#8217;t fit in the oven. You can use smaller ones if you want. This recipe is inspired by <em>Green Kitchen Stories.<\/em><\/p>\n<p><a href=\"http:\/\/www.teresamisu.com\/wp-content\/uploads\/2014\/12\/LRT_00001a.jpg\" target=\"_blank\" rel=\"noopener\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5726\" src=\"https:\/\/www.teresamisu.com\/wp-content\/uploads\/2014\/12\/LRT_00001a.jpg\" alt=\"\" width=\"800\" height=\"463\" srcset=\"https:\/\/www.terezaschoice.com\/wp-content\/uploads\/2014\/12\/LRT_00001a.jpg 800w, https:\/\/www.terezaschoice.com\/wp-content\/uploads\/2014\/12\/LRT_00001a-480x278.jpg 480w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n<h2>Stuffing<\/h2>\n<ul>\n<li>2 cups\u00a0uncooked white quinoa (you can use rice, buckwheat, amaranth or rice)<\/li>\n<li>2 onions, finely chopped<\/li>\n<li>2 large stems kale, finely chopped<\/li>\n<li>2 cups spinach<\/li>\n<li>1 carrot<\/li>\n<li>4 tbsp white wine<\/li>\n<li>1 tsp dried thyme<\/li>\n<li>sea salt and pepper<\/li>\n<li>1\/2 cup cranberries<\/li>\n<li>1 handful pumpkin seeds (you can use sunflower as well)<\/li>\n<li>flat-leaf parsley<\/li>\n<li>\u00a0150 g goat\u2019s or sheep\u2019s feta cheese<\/li>\n<\/ul>\n<p>First make a hole into your pumpkin, put out the seeds and pulp. Drizzle with oil inside.<\/p>\n<p>Preheat the oven to 220\u00b0C. Clean your quinoa through water. Place\u00a0in a saucepan and cover with 3 cups water. Cook it and set aside. Meanwhile saut\u00e9 the chopped onions on olive oil and add kale, chopped carrot for a couple of minutes until soft. Add wine, thyme, salt and pepper and cook for a couple of minutes. Add cranberries, sunflower seeds, parsley and stir. Add your cooked quinoa and feta cheese. Your stuffing is made.<\/p>\n<p>Now fill the pumpkin with the stuffing. Bake in love for about 1 hour and 30 min (it really depends how strong is your oven and how big is your pumpkin). Always check it with a knife, until it is soft. The pumpkin is ready when skin is browned and the flesh is very soft.
