<\/a><\/p>\nLast week I received my first OOOOBY box <\/a>(out of our own backyards, pretty cool right?). They have an amazing website with an option of local\/organic boxes with an option of adding anything you need… From legumes, coconut oil, granola to nut butters, everything made in NZ\u00a0of course.<\/p>\n They find local food and bring it right to your door step. Easy! And here is my Lil’ Organic Mix Box <\/a>and a recipe to go with it!<\/p>\n <\/p>\n Heat coconut oil in a large skillet over medium heat. Add garlic, leek and ginger and cook 1 minute. Add bok choy and a bit of tamarin (optional) cook 3 to 5 minutes, until greens are wilted and stalks are crisp-tender. Season, to taste, with salt and black pepper. Set aside.<\/p>\n In another saucepan heat the coconut\u00a0oil over moderately low heat and cook garlic and the curry powder (or paste) and cook, stirring constantly, for 30 seconds. Stir in the coconut milk, salt and ginger and bring mixture to a boil. Lower heat and simmer for 10 minutes.<\/p>\n While the sauce is simmering, place noodles in a large bowl, cover with warm water and let sit for 5 minutes. Meanwhile, bring a large pot of salted water to a boil. Add noodles and cook for 5 minutes. Pour noodles into a colander, rinse under cold water, and drain well.
