Last day I received a whole lot of organic pears thank to <a href=\"https:\/\/www.ooooby.org\/auckland\" target=\"_blank\" rel=\"noopener\">OOOOBY<\/a>! And I&#8217;ve decided to do a good ol&#8217; apple pie, but that I changed the half of it into pear, with this beautifully crunchy healthy crust and crumble on top. Give it a try with a scoop of vanilla ice cream!<\/p>\n<h2>Crust<\/h2>\n<ul>\n<li>3 cups spelt flour or almond meal for gluten free<\/li>\n<li>1 cup oats<\/li>\n<li>3\/4 cups butter (cut into small pieces) or coconut oil<\/li>\n<li>2 tbsp cold water<\/li>\n<li>2 Tbsp honey<\/li>\n<li>pinch salt<\/li>\n<li>3 tsp cinnamon<\/li>\n<li>3 tsp ground ginger<\/li>\n<\/ul>\n<p>Combine\u00a0the spelt flour and butter into a mixing bowl or a food processor.\u00a0Pulse\u00a0lightly until the mixture resembles fine breadcrumbs. \u00a0You can also do this with your hand by gently rubbing the flour and butter with your fingertips.\u00a0Add\u00a0a little cold water to combine into a dough.\u00a0Coat\u00a0the dough in rolled oats and rest in the fridge for 30 minutes. In that time make apple filling.<\/p>\n<p>With your hands put the 2\/3 of your crust into the pie dish.\u00a0Line\u00a0the pie dish evenly and fill in any gaps in the pastry as needed. Bake the crust for 10 min on 175 degrees. Leave to cool.<\/p>\n<h2>Apple\/Pear filling<\/h2>\n<ul>\n<li>4 sweet red apples<\/li>\n<li>4 pears<\/li>\n<li>1\/2 cup fresh apple juice<\/li>\n<li>2 tsp\u00a0vanilla extract<\/li>\n<li>1 tsp cinnamon<\/li>\n<li>1 Tbsp honey or maple syrup<\/li>\n<li>1 Tbsp cornstarch<\/li>\n<\/ul>\n<p>Cut apples and pears into small pieces and\u00a0place into a large pot.\u00a0Add\u00a0the apple juice, vanilla and cinnamon.\u00a0Place\u00a0onto the stove over a medium heat.\u00a0Cook, stirring every now and again until the apples start to soften and collapse. This should take about 10 min. 15 \u2013 20 minutes.\u00a0Remove\u00a0from the heat\u00a0add cornstarch.\u00a0Fold\u00a0through the maple syrup or dried fruit then allow the filling to cool. Add it to the pie crust and crumble on top the remaining pie crust.
