Rest the dough in the fridge for 30 minutes. In that time make apple filling.<\/p>\n<p>With your hands put the 2\/3 of your crust into the pie dish.\u00a0Line\u00a0the pie dish evenly and fill in any gaps in the pastry as needed. Bake the crust for 10 min on 175 degrees. Leave to cool.<\/p>\n<p><strong>Apple\/Pear filling<\/strong><\/p>\n<p>Cut apples and pears into small pieces and\u00a0place into a large pot.\u00a0Add\u00a0the apple juice, vanilla and cinnamon.\u00a0Place\u00a0onto the stove over a medium heat.\u00a0Cook, stirring every now and again until the apples start to soften and collapse. This should take about 10 min. 15 \u2013 20 minutes.\u00a0Remove\u00a0from the heat\u00a0add cornstarch.\u00a0Fold\u00a0through the maple syrup or dried fruit then allow the filling to cool. Add it to the pie crust and crumble on top the remaining pie crust.
