I was quite busy the past few weeks, creating in the kitchen actually, but couldn&#8217;t find the time to write up my recipes here for you. As you all probably noticed my mum is also visiting us here in New Zealand, I&#8217;ve been driving her around as much as I could and showing her the beauty of this lovely island. Secretly my evil plan is succeeding; she is falling in love with this country and I know I&#8217;ll be seeing her a lot around our remote country, yipee! She has been eating a lot of my cooking as well and this is one the all time favourites. Healthy Apple Berry Crumble, perfect for all seasons, for us I served it with a cup of tea, for all you who are enjoying summer, you can have this with a scoop of healthy ice cream (jealous!).<\/p>\n<h2>Crust<\/h2>\n<ul>\n<li>2 cups oats<\/li>\n<li>1 cup almond flour<\/li>\n<li>\u00bc cup applesauce<\/li>\n<li>\u00bc cup maple syrup<\/li>\n<li>2 Tbsp coconut oil<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>1 tsp fine grain sea salt<\/li>\n<li>1 tsp baking powder<\/li>\n<li>1 tsp cinnamon<\/li>\n<\/ul>\n<h2>Filling<\/h2>\n<ul>\n<li>1 cup\u00a0apples,\u00a0 peeled and\u00a0grated<\/li>\n<li>3 cups blueberries (or any berries)<\/li>\n<li>1 Tbsp ground cinnamon<\/li>\n<li>\u00bc tsp ground nutmeg<\/li>\n<li>\u00bc tsp fine grain sea salt<\/li>\n<li>zest of 1 organic lemon<\/li>\n<li>1 Tbsp arrowroot powder<\/li>\n<li>1 Tbsp honey<\/li>\n<\/ul>\n<h2>Crumble Topping<\/h2>\n<ul>\n<li>1 cup oats<\/li>\n<li>2 Tbsp maple syrup<\/li>\n<li>2 Tbsp coconut oil (or\u00a0butter)<\/li>\n<li>1 cup shredded coconut\u00a0(or any ground nut)<\/li>\n<li>\u00bd tsp ground ginger<\/li>\n<li>pinch salt<\/li>\n<li>2 Tbsp buckwheat or any other flour<\/li>\n<\/ul>\n<p>Preheat oven to 180\u00b0C.\u00a0\u00a0In a food processor blend the oats until you get flour like consistency. Add all other ingredients for the crust. Place the dough in a baking dish a press.<\/p>\n<p>For the filling combine all ingredients in a bowl. Put them on top of the crust.<\/p>\n<p>For the crumble, combine all the ingredients in a small bowl and mix. Sprinkle it over the fruit layer. Place in the oven for 30 minutes until golden. Let cool completely.
