Almond pulp chocolate muffin


Since I don’t have my extra strong blender here I have to make some changes in my diet. So I baked muffins, yes healthy muffins 😉 Instead of flour I used almond pulp and instead of sugar, Agave syrup… Here is the recipe for helthy almond pulp chocolate muffins.


  • 1 cup almond pulp*
  • 1/2 cup Agave syrup
  • 2 tbsp real Vanilla
  • 4 tbsp melted coconut oil
  • 4 eggs
  • 200ml almond/rice/oat/coconut/soy milk
  • 2 tbsp baking powder
  • 2 tbsp of raw chocolate powder
  • pinch of Himalayan salt
  • (I added strawberries and raisins, but you can also add banana, berries etc.)
*Blend a cup of almonds with 2 cups of water, squeeze it through a dry kitchen towel. This way you will make the almond milk, the pulp will stay in the kitchen towel.

Mix the dry ingredients together and wet ingredients together, then mix both and bake in 300C for 15min.

Easy peasy!
