Would you believe me that this vegan french toast only has 5 main ingredients? Probably the easiest dish that can be made for breakfast even on a weekday! It takes only 5 minutes to prep and is great for when you have stale bread to use up and those brown bananas that need attention asap. This is minimalism at it's finest, right?
- 6 slices of bread (stale bread is even better)
- 1 banana
- 1 Tbsp flax seeds (crushed)
- pinch vanilla and cinnamon
- 1/2 cup/120 ml almond milk
- pinch salt
- 1 coconut yoghurt
- 1 homemade jam
- 1 maple syrup
In a food processor mix the almond milk, flax seeds, vanilla extract and cinnamon (you can add a tablespoon maple syrup if you want also), banana and salt. Whisk together and place aside for the batter to set up and get thicker for 15 minutes. Meanwhile, cut the bread into six slices. When the batter is thicker, whisk again.
Heat 2-3 tablespoons coconut oil in a pan over medium high heat until hot. Dip the bread into the batter and place in the pan to pan fry. Pan fry on each side for 4 minutes until it is crispy on the outside, then turn over and pan fry on the other side.
Serve immediately topped with maple syrup, coconut yoghurt and jam.
