I know my raw cakes are on pause for a bit. It’s just that I missed my baking so much! I love the smell in the kitchen when you put a freshly made pastry in your oven and the butterflies that come in your tummy with it. It’s pure pleasure being able to do desserts in the oven and healthy ones as well!
This one is a tofu chocolate cake with a taste of organic coffee. It’s vegan and guilt free, meaning without sugar or any nasties you don’t want in your body. It’s ridiculously simple with healthy, wholesome ingredients.
- 2 tbsp cocoa or raw cacao powder
- 3 tbsp coconut oil
- 1/2 cup raw nuts – any nut will do
- 1/2 cup shredded coconut
- 1/2 cup of dried pitted dates (soaked in water for 20 min and blended into a paste)
- 1/8 tsp salt
Combine all ingredients in a food processor and blend. Then transfer to a 20cm pie dish. Using some baking paper, press it into the pan and pour desired filling on top.
- 1/2 cup strong-brewed coffee
- 600g silken-firm tofu
- 1/3 cup coconut butter, melted
- 2 tsp pure vanilla
- 1/3 cup rice malt syrup
- 50 grams 85% or 90% dark chocolate
- 1/2 tsp fine ground sea salt
Blend everything together (easy right?) and pour it over your crust. Bake at 180 for 30-40 min. You have to let it cool and refrigerate overnight!!! It will harden beautifully and you can enjoy it for breakfast if you wish! 😉
On top you can add the healthy chocolate ganache.
