Dark Chocolate Lemon Scones
cakes + muffinsI've did quite a lot of baking the past few days, trying out recipes I've always wanted to try in a healthier way. Today it was scone time! I was addicted to these in USA, but they were quite a bad habit, full of white flour and sugar. I was determined to make them just as good but healthy... I think it worked, they lasted for 5 minutes on the table!
- Ingredients
- 1 1/2 cup spelt flour
- 2 Tbsp honey (or other sweetener)
- 2 tsp lemon zest
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 6 Tbsp butter
- 1 egg yolk
- 1/4 cup + 2 Tbsp buttermilk
- 1 cup chunks of dark chocolate
- Egg wash
- 1 egg
- 1 Tbsp water
Pre-heat oven to 220C and cover a sheet tray in parchment paper. In a large bowl, sift together all the dry ingredients. Cut in butter until butter is in little pea size pieces. In a smaller bowl, whisk together egg yolk and butter milk and then stir into dry ingredients until dough pulls together. Fold in chocolate chip chunks and roll out onto a floured surface.
Whisk together the egg and water, set aside. Pat dough into a square and cut into four squares or more. Place on the sheet tray and brush egg wash over scones (this will give a nice golden color.) Place tray in oven and bake for 12-15 minutes. Best eaten right out of the oven, so warm and so soft!
