Healthy Brunch Turkish Eggs and Hummus

A recipe that you can make for your friends and family. Turkish eggs with Greek yoghurt and garlic served with Hummus.

  • ingredients
  • 2 organic eggs
  • 1 Tbsp apple cider vinegar
  • 100 g Greek yoghurt
  • 1 clove garlic
  • 1 knob butter
  • pinch smoked paprika and chilli
  • pinch salt and pepper
  • buckwheat bread
  • 1 hummus
  • 1 bunch dill


For the Turkish Eggs with Hummus place the yoghurt into bowl large enough and stir in the garlic and salt.  Set aside.

Melt the butter gently in a seperate small saucepan until it is just beginning to turn hazelnut-brown. Turn the heat off, then stir in the smoked paprika and chilli and set aside.

Fill a wide, lidded saucepan with water and place over a medium heat. When the poaching water is just starting to simmer, gently slide in the eggs, one on each side of the pan. Turn the heat right down so there is no movement in the water, and poach the eggs for 3–4 minutes, until the whites are set and the yolks still runny. Transfer the eggs to the lined plate using a slotted spoon.

Divide the warm, creamy yoghurt between two shallow bowls, top each with a poached egg, pour over the peppery butter, scatter the chopped dill on top and eat with toasted buckwheat bread and hummus. Don’t forget to check out the video of this recipe! Find it HERE!
