Healthy Slovenian Breakfast


I accepted a challenge to do a healthy variety of a Traditional Slovenian Breakfast in collaboration with KuhaM. Every month they present a challenge for bloggers and we have to make it work in our own way. This time the challenge is to make a Traditional Slovenian Breakfast. It consists of bread, butter, honey, milk and an apple. Of course you will not see a ordinary bread on my blog, so I mixed it up a bit. I made the Revolutionary Energy Bread, Plum Chia Jam, Sweet Vanilla Almond milk with an apple (that I approve).

Revolutionary Energy Bread

  • 1 cup sunflower seeds
  • ½ cup pumpkin seeds
  • ½ cup almonds
  • 1 ½ cup oats
  • 2 Tbsp chia
  • 4 Tbsp psyllium husk
  • 1 tsp salt
  • 1 Tbsp maple syrup
  • 3 Tbsp olive oil
  • 1 ½ cup water

Preheat your oven on 180°C. Mic all dry ingredients and combine with wet. Leave to sit in the bread tin for about an hour. Bake for 20 minutes, after remove from bread tin and bake on the other site for another 40 minutes. Wait for it to cool down and than serve.

Plum Chia Jam

  • 3 large, softened blood (or other) plums
  • 2 tbsp chia seeds
  • ¼ tsp vanilla powder/paste OR ½ tsp vanilla extract
  • 1 Tbsp lemon juice
  • pinch of ginger (optional)

Chop plums roughly and discard pits. In a small bowl, mash plums gently until broken up and juicy. Add chia seeds and vanilla powder and then pour into a 400ml sterilised glass jar. Refrigerate for 60 minutes to gel up and thicken. Jam will keep in the fridge for up to one week, or can be frozen.
