Matthew Kenney Cuisine – Day 3


Day 3 in this beautiful place! Today Matthew Kenney Culinary Academy was all about smoothies, kimchi, raw lasagna, nut milks and much much more. We learned the very basics to a beautifully textured smoothie with flavor that does not disappoint.

We were hands on the preparation but especially on the presentation, all in all we eat with our eyes first. It’s great that we have lots of time to perfect our skills for food styling and our chef instructors let us do whatever we think would look good on a plate.

I love it that we are covering the fundamentals of raw cuisine, even though for some it might be silly, but we are getting some very valuable tips. So for today I will not be rambling too much, but I had a follower ask for an easy peasy recipe for a smoothie to do at home that is nutritionally dense and fulfilling. Here is a recipe for a beginner green smoothie.

Greeny Meanie

  • 2 cups of spinach or kale
  • 1 frozen small to medium banana (ripe and peeled)
  • 3/4 cup of frozen mixed berries (or fresh strawberries or blueberries)
  • 1-1 ½ cups of unsweetened vanilla almond milk

What now?

Blend it of course! And decorate as you please.
