Matthew Kenney – Day 29 and recipe


Day 29 at Matthew Kenney Raw Cuisine was an introduction to the Anti Griddle machine. We were like little kids playing around with this cool new toy that freezes everything you can possible imagine. We decided to experiment and try out a frozen salad and ice cream sandwiches. The salad was meh, but the ice cream sandwiches were whoa!

Many of you asked me for an ice cream recipe using the ice cream maker, so here it is! Basic raw vanilla ice cream.


  • 1 cup soaked raw cashews
  • 1 cup coconut meat
  • 1 cup non-dairy milk (use pistachio milk if you would like pistachio ice cream)
  • 3/4 cup agave/honey/maple syrup/coconut nectar
  • 1 vanilla bean
  • 2 Tbsp vanilla extract
  • pinch of salt
  • 1 Tbsp lemon juice
  • 1/3 cup coconut oil, melted

Add matcha or spinach juice for green colour.

Blend everything together except for coconut oil. Add the coconut oil last and blend again. Pour into you ice cream maker and follow the instructions. If you don’t have one you could try freezing it, but it will not be as creamy.
