Quinoa Bowl


Think of it as a fabulous excuse to whip up something healthy to take for lunch throughout the work week that’ll nourish your body and calm your brain. A Quinoa Bowl is super easy and super quick to make!


  • 1 avocado
  • 2 large handfuls of fresh spinach
  • 1/4 cup pine nuts
  • 15 fresh basil leaves
  • 1 large garlic clove
  • juice from half a lemon
  • ½ tsp salt

Combine all ingredients in a food processor and blend until smooth.


  • 1 cup quinoa
  • 1 red bell pepper
  • 1 zucchini
  • 1 leek
  • 1/2 cup chopped sun-dried tomatoes
  • fresh rosemary
  • fresh thyme
  • salt/pepper

Always soak and rinse your quinoa. Cook 1 cup of quinoa in 2 cups of salted water. In a separate pan sauté your veggies and add your herbs. When cooked add your quinoa to the veggies and serve with a spoonful of your pesto.
