Raw Cookies


This week is all about product pricing, recipe costing and all that math I left behind in high school! Oh well it’s haunting me back even in culinary school. I will not bore you with the food equations that we are learning now, so I am presenting you a very delicious recipe… Raw cookie recipe!


  • 1 cup almond flour
  • 1 cup oat flour
  • 2 Tbsp coconut sugar
  • ½ cup pear puree (or any other, just blend 1 pear)
  • 1 Tbsp vanilla extract
  • 2 Tbsp cacao butter
  • pinch of salt
  • 1 tsp lemon juice
  • 1 tsp cinnamon

In a bowl mix together the dry ingredients. In your blender, blend thoroughly your wet ingredients. Add the wet to the dry and mix by hand. Add flax meal if it is too sticky. Make cookie shapes and leave in the fridge for an hour and than transfer them in a dehydrator for about two to three hours.
