With tofu and dairy-free chocolate, this is a tasty vegan twist on regular chocolate mousse. Use either silken or firm tofu (if using firm please add extra 1/4 cup of coconut or almond milk). This recipe serves four people.
- 100 g dark chocolate
- 300 g silken or firm tofu
- 4 Tbsp maple syrup
- 1 tsp vanilla extract
For the three ingredient vegan chocolate mousse place the chocolate in a heatproof bowl over a saucepan of simmering water and stir occasionally until the chocolate has melted. Set aside to cool to room temperature.
Place the tofu, maple syrup and vanilla in a small food processor and process until smooth. Add the cooled chocolate and process again until smooth.
Divide between 4 x dessert glasses or cups and refrigerate for 20 minutes. To serve, top with the blueberries, raspberries, extra maple syrup, hazelnuts, lemon balm and shaved chocolate.
You could even make a boozy three ingredient vegan chocolate mousse and add rum, but then you need to call it four ingredient mousse, ha!
