This yummy coconut granola is made without sugar and inspired by Sarah Wilson of the I quit sugar programme. It’s super crunchy and the best I did so far!

Recipe

  • 5 tbsp melted coconut oil
  • 1/2 cup Quinoa (optional)
  • 3 cups coconut flakes
  • 2 tablespoons chia seeds
  • Vanilla
  • 3 teaspoons cinnamon
  • 2 cups almonds, cashews, pecans, walnuts, pepitas roughly chopped
  • pinch of salt
  • 4 tbsp raw Cocoa (optional)
  • 2 ripe bananas – mashed
  • 3 tablespoons rice malt syrup or any sweetener you prefer (optional)

Preheat oven to 140 C. Mix all ingredients in a bowl, spread evenly on baking paper on a tray and bake for around 20 minutes, until golden, turning halfway. Cool it down so its crunchy.

This is paleo friendly, if you insist you can also add oats, but add a dash more of the coconut oil.
