Teresamisu is doing her gluten free coconut flour pancakes! This is the last day in Auckland, because we are going to South Island. Me and my better half have a mini camper van waiting in Christchurch where our journey begins. I will be very selfish and leave the social media and blogging far away from us. Maybeee I’ll post a bit of sneak peaks of our fun exploring the land of the sheep 😉 So without further ado, here is my recipe for super simple gluten, dairy and refined sugar free coconut flour pancakes. Recipe
2 cup buckwheat flour
3 tlbsp coconut flour
2 eggs
4 cups milk – soy/almond/rice
1 tlbsp coconut sugar//rice malt syrup
vanilla
Butter/virgin coconut oil- for frying
To serve
Handful of blueberries and strawberries
1 tlbsp yoghurt. I have been using the delicious Five AM honey and cinnamon, it is so rich and creamy, you only need a little.
Method
Combine buckwheat and coconut flour, coconut sugar, egg and milk, stirring well in a large mixing bowl.
The mixture should have a smooth but quite thick, cake like consistency. If it is too gluggy just add a little more milk.
Heat fry pan and add a dab of butter/virgin coconut oil. Make sure you pan is quite hot before spooning 2 – 3 tlbsp of your pancake mixture.
Once small bubbles have formed through out, flip!
Cook for another minute, and then serve topped with blueberries, strawberries and yoghurt.
