This is a quick breakfast idea. Healthy sugar-free apple crumble with coconut yogurt.
Apple Crumble
- 1 apple
- raisins (optional)
- 1 kiwi
- cinnamon
Cut the fruit into slices and place everything in to a medium saucepan and cover with water. Bring to the boil, and then turn down the heat. Simmer until the fruit turns soft.
Topping
- 1/4 cup almond pulp
- 1/4 cup desiccated coconut
- 3tbsp coconut oil
- bashed up nuts
Preheat the Oven to 180°C
Mix the topping in a large bowl with hands. Spoon the fruit filling in to a baking dish and then cover with the topping.
Put in to the oven and bake until golden.
Raw Coconut Yoghurt
- 1.5 cups of young coconut meat taken from about 2 young thai coconuts
- 1 1/4 cups coconut water
- 1 t probiotic powder
Blend coconut meat and coconut water in high speed blender until completely smooth. Pour mixture into bowl and fold in 1 t of probiotic powder until combined well. Place mixture in glass container with lid and place in dehydrator for 3-6 hours on 100′F to incubate. You will be able to tell if your probiotics work, if your yoghurt has a fluffier consistency than prior to incubation. Add Vanilla or Raspberries for a Berry Yogurt. Yummy!
