An exceptional chef and cookbook author, Ana Žontar Kristanc, was a guest in the Tereza’s Choice kitchen. She accepted the Tereza’s Choice challenge, in which she received a surprise product and used it to create an unusual recipe. The package contained Tereza’s Choice Curry mayonnaise, which inspired her to whip up something a little different that you may not be used to: an unconventional chickpea salad. Ana says mayonnaise is queen in her kitchen when it comes to potato or egg salads; this time she experimented with chickpeas too, proving that chickpeas are not just for falafel and hummus!

Chickpea salad is a wonderfully tasty and filling dish, ideal as a meal on its own (a snack to take to work) or as a side. To add a little colour, we suggest red additions such as diced red pepper or tomato. It can also be served in a sandwich or wrapped in a tortilla; fresh lettuce adds a refreshing touch.
Ingredients
ingredients
- 250 g cooked chickpeas
- 1/2 red onion
- 5 gherkins
- 3 Tbsp Tereza's Choice Curry mayonnaise
- salt to taste
- 2 Tbsp lemon juice
- wholegrain bread with seeds
- a few leaves crisp lettuce
Instructions
Chickpea Salad with Mayonnaise
For chickpea salad with mayonnaise, you can use either canned chickpeas or cook them yourself. Just be careful not to overcook them; we want the chickpeas to retain a little bite.
Place the cooked chickpeas in a large bowl and mash them with a potato masher. Finely chop the pickles and red onion, then add them to the bowl with the chickpeas. Add Tereza’s Choice Curry mayonnaise, lemon juice, salt and pepper, and mix.
Serve the chickpea salad in a sandwich with a lettuce leaf and, if you like, avocado. It can also be wrapped in a tortilla or simply served as a side.
