Hello! I have only four pictures for you. No I’m not ill, I just had a very hectic day 16 with getting together my final presentation menu. This is our final Level 1 week at Matthew Kenney Cuisine and we have to present a full menu to our instructors. It sounded so fun at first, but now that it’s actually happening It’s scaring the s**pirulina out of me! Soon I’ll let you know my full menu I just need to make some tweaks.
Today was testing/tasting day. I didn’t manage to try out my whole menu, hopefully I’ll manage that tomorrow. It was a fun day though, it’s like I grew a noise cancelling technology, zoning everyone out (even my photography!) and concentrating on my project.
The first part of the day we created a delicious chocolate tart for tomorrow and a chia seed pudding for breakfast. So I think it’s time for another recipe, here is my favorite Chia Seed Pudding!
INGREDIENTS
- 1 cup coconut milk
- 3 Tbsp chia seeds
- 1 Tbsp Yacon
- 1 Tbsp almond butter
- 1 tsp vanilla essence
- 1 tsp ground ginger
- 1 tsp cinnamon
Toppings: banana, figs, toasted coconut flakes, berries etc.
Blend your coconut milk with the almond butter, spices, salt and sweetener. Add the chia seeds and mix in a bowl and set aside in a fridge for two hours (or over night). Decorate with your favorite toppings.
