Here is a comforting “goodbye to summer” nectarine tart! It’s so soft it feels like you’re actually eating a hug.

Preheat your oven to 180 °C. In one bowl mix all the dry ingredients (almond flour, rice flour, arrowroot flour, salt, baking powder, coconut sugar and lemon zest) and in another bowl mix the wet ingredients (egg, oil, milk and vanilla extract). Carefully mix in wet ingredients to the dry ingredients. Transfer it to a greased tart tin and decorate with sliced nectarines. Bake 45–55 minutes. Serve when slightly cooled down.

- 1/4 cup arrowroot flour
- pinch of salt
- 2 tsp baking powder
- 1/2 cup coconut sugar
- zest of 1 lemon
- 1/2 cup almond milk
- 2 Tbsp coconut oil
- 1 egg
- 1 tsp vanilla extract
- 6 nectarines (or any other seasonal fruit)
