Blueberry pie is a perfect all year dessert. Yes, it’s pie; but blueberries are one of the healthiest foods around, and they require no pitting or peeling. I love the taste of mouth watering Fresh Healthy Blueberry Pie! Yum! This blueberry pie is probably the best I have ever tasted, and it’s guilt free!
Crust
- 1 cup rolled oats (gluten free if needed)
- 1 cup macadamias
- 1/2 cup rice syrup
- 1/2 cup coconut oil, melted
- 1 tsp. vanilla
- 1/2 tsp. salt
- 200 g buckwheat flour
Blend oats into oat flour, add macadamias and blend until you get a crumbly texture. Add the flour mixture into a bow with all other ingredients, mix by hand and leave to sit for about 20 min in the fridge. Meanwhile make the filling.
Filling
- 1 cup blueberries
- 1 apple chopped
- 1 tsp cinnamon
- 1 tsp vanilla
- 2 Tbsp rice syrup
- 2 Tbsp arrowroot
Add all of the ingredients in a sauce pan except arrowroot and bring to boil. Lower the temperature and mix for another 5 min. Add arrowroot and mix very well. Now bring out the crust and use 3/4 of the dough. Put it in a pie tin and pour over the filling. Now from the remaining dough shape the top strips. Bake at 180C for 30 min.
